Here’s another fun St. Patrick’s Day recipe!

Celtic Cabbage Rolls

Ingredients:

  • 1/2 cup water
  • 1/2 cup uncooked brown rice
  • 10 cabbage leaves (Green or red are both fine; this recipe uses green for the St. Pat’s theme.)
  • 1 pound ground turkey
  • 1/4 cup chopped onion
  • 1/3 cup chopped fresh parsley
  • 1 egg
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 Tbsp. bread crumbs
  • 8 oz. V8 juice (low sodium)

Live Rite Shake Recipe: Skinny Shamrock Shake for St. Patrick’s Day

Happy St. Patrick’s Day! Start the day off with this festive shake. Who knows? It just might bring you good luck!

Skinny Shamrock Shake

Ingredients:

  • 16 oz. Vanilla fat-free Greek yogurt* (frozen for about 2 hours)
  • 1½ cups skim milk
  • 2 scoops vanilla Live Rite protein powder
  • ½ teaspoon mint extract
  • Green food coloring (optional)

Directions: Combine all ingredients in a blender or food processor. Blend until all ingredients are combined and the mixture is smooth. Pour into 2 or 3 glasses for a great way to start off your St. Patrick’s Day!

Makes 2-3 servings. You can refrigerate the additional shake(s) for future meals or snacks.

*Recipe uses Greek yogurt that is is 90 calories per 8 oz.

Nutritional Info: If divided into 2 servings – 256 calories per serving, 25.5 g protein, 1.35 g fat. If divided into 3 servings – 170 calories, 17 g protein, 0.9 g fat.
