Recipe: Beet Infused Hummus

What’s this pink concoction, you wonder? Well it’s beet infused Hummus!  Take your flavor profile up a notch while nixing some of the fat for a healthy & oh-so-stylish take on this traditional spread. Whip this up for a perfect snack after the Making Strides Walk Against Breast Cancer this weekend.

What you’ll need:

  • beet infused hummus recipe1 can chick peas-
  • 2 small garlic cloves-minced
  • 1/2 a small beet- diced
  • 1/4 plain greek yogurt
  • 2 tbsp lemon juice
  • 1/4 cup chopped parsley
  • 1 1/2 tbsp olive oil

How to make it:

  1. Toss and mash chickpeas to remove the skin from each pea.
  2. Blend all ingredients in a food processor until smooth.
  3. Serve with veggie crudites or whole wheat crisps.
